Acetaldehyde is a flavor compound with a green apple-like aroma, used in a variety of food and beverage applications. It is intentionally added to enhance flavors in products like milk, baked goods, fruit juices, candy, desserts, and soft drinks. In perfumes, it's particularly known for its role in contributing to creating soapy, waxy, lemony, and floral notes often in combination with other aldehydes to create complex scents. In some cases, acetaldehyde may be used as a deodorant ingredient.
